Popcorn Crusted Chicken Recipe
In the July issue of All You Magazine I found a recipe for Popcorn Crusted Chicken. I was really excited to try out a new chicken recipe and see what John thought of it. We have 40 pounds of chicken from Zaycon Foods that we are picking up in a few weeks so I figured I had better start trying new recipes.
John really was not sure what to think when I told him I was coating his chicken with popcorn. He looked at me like I was crazy. We ended up having a great time preparing these together. John’s Mom was over for dinner and she really enjoyed them. She said she would be happy to have me make them again.
Here is the recipe we adapted from the All You Magazine July Issue
Popcorn Crusted Chicken
3 cups plain popcorn
1/2 tsp garlic powder
1/2 cup all-purpose flour
1 large egg beaten
1 lb boneless skinless chicken thighs, Trimmed of fat
cut into 1 1/2 inch strips
3 tbsp canola oil
1 tbsp unsalted butter
In a food processor, pulse popcorn, garlic powder, and 1/4 tsp salt until mixture resembles coarse bread crumbs
Transfer to a shallow bowl
Place flour in a 2nd shallow bowl
Place egg in a 3rd shallow bowl.
Dredge each chicken piece in flour, then in beaten egg, then in popcorn crumbs turning to coat.
Transfer to baking sheet, repeat with remaining chicken
Discard any leftover flour, beaten egg or popcorn crumbs
In a large skillet over medium-high heat, combine oil and butter
When butter has melted, add chicken, working in batches if needed
Cook, turning once, until chicken is well browned on both sides and cooked through
About 8 minutes, sprinkle with additional salt if desired
Adaptions we made – I left out the salt from the recipe. I used chicken breast and just let it cook a bit longer. I did have to turn the heat of the skillet down a bit after I started cooking. The popcorn started to burn really easily.
