Egg Scramble with Bacon
I made this breakfast dish at least 2 times while John’s Nephews were visiting. They asked if they could have it again after the first time. It was really easy to make and used ingredients that I already had in the house. I came up with the idea in the middle of the night while laying in bed. I am not sure what was keeping me up at night but it turned into a great breakfast the next day.
1. Cook bacon
2. I dumped the eggs, bacon and Ro-Tel in a frying pan set on medium high.
3. I let everything cook together. I stirred everything every few minutes to break it up
4. Serve on a plate or wrap in a burrito shell.
