Melt in Your Mouth Cheesecake Recipe
I am really excited to bring you this fantastic Melt In Your Mouth Cheesecake Recipe. I was given this recipe from Ellena Conway who owns Latah Creek Winery here in Spokane with her husband Mike. We had the pleasure of spending time at the Latah Creek 30th Anniversary event and had the opportunity to sample some of Ellena’s amazing recipes.
Melt In Your Mouth CheeseCake Recipe
Ingredients
Crust:
20 individual graham crackers
3 tsp sugar
1/2 tsp cinnamon
1/3 cup melted butter
Filling:
2 8-ounce packages of cream cheese (room temperature)
2 eggs
3/4 cup + 2 tbsp sugar
2 tsp vanilla
1 tbsp lemon juice
Topping:
2 cups sour cream
4 tbsp sugar
2 tsp vanilla
Directions
Crust
Crush graham crackers and mix with sugar, and cinnamon. Add melted butter and press into a 10″ spring form pan.
Filling
Put room temperature cream cheese into a mixer and add in eggs, sugar, vanilla and lemon juice.
Beat well
Pour mixture into crust and bake at 350 degrees for 20 minutes
Cool for 5 minutes
Topping
Blend together sour cream, sugar and vanilla
Spread over cooled cream cheese layer and return to 350 degree oven for 5 minutes
Chill thoroughly and serve
