John and I spent the morning exploring Pig Out in the Park and walking along the Centennial Trail. It was a gorgeous morning to walk in
the park. Pig Out in the Park is one of our favorite Spokane events. It is a great way to end the summer and kick off Fall. 5 years ago while John and I were at Pig Out in the Park we heard Leroy Bell sing. We bought his CD after hearing him and found our wedding 1st dance song on his album.
This morning we wandered among the vendors checking out all of the amazing food they had to offer. We saw bacon wrapped hotdogs, corndogs that looked like they were a foot long, chocolate coated strawberries, Gumbo, Nutella Crepes, Grilled Corn, and so many other items. We could smell the amazing food as we walked along the Centennial Trail.
There are a ton of fantastic concerts this weekend at Pig Out in the Park. We found a lovely covered area to the left of the main stage to enjoy our food. It was nicely shaded and a lot cooler than sitting out in the grass. The area was really clean and had quite a bit of seating. I really liked the view of the stage and being able to relax listening to the music.
We tried Phat Cakes from the Phat Truck this morning. Oh my goodness WOW is all I can say! Brown Sugar crusted Pound Cake with mixed berries and whipped cream. I had never thought of grilling pound cake before but I will be trying to recreate this recipe really soon.
