Skillet Parmesan Potatoes Recipe
4 slices bacon cut into 1/2 pieces
1 onion chopped
2 Tbsp water
1 1/2 lb. red potatoes thinly sliced
2 Tbsp, Parmesan Cheese
Cook and stir bacon in 10-inch skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon, reserving 2 Tbsp. drippings in skillet. Drain bacon on paper towels. Add onions to skillet; cook and stir 6 min. Remove skillet from heat. Transfer onion to bowl.
Add water to skillet. Arrange 2 cups potatoes on bottom of skillet; top with layers of half onion mixture and bacon. Repeat all layers. Top with remaining potatoes; cover.
Cook on medium-low heat 30 min. or until potatoes are tender top with Parmesan .
Mom notes: I left out the red pepper that was used in the orginal receipe. Mine wasn’t as pretty as the picture in the book, but Dad liked it and there were no leftovers.
