We have really been focusing on eating better and trying to re-work some of our favorite recipes. When I was working on this Mediterranean Shrimp and Pasta Recipe I kept thinking of all of the dishes we make that are heavy with butter. John is a huge fan of shrimp and loves when I make it for dinner. I decided to change up my normal buttery shrimp recipe and try making it with Pompeian OlivExtra Premium Mediterranean Blend.
I must admit this Mediterranean Shrimp and Pasta Recipe turned out amazing and was so dang easy to make! John kept asking when it was going to be ready. He said the smells coming from the kitchen were making his stomach growl and he was ready to enjoy the Mediterranean Shrimp and Pasta.
Mediterranean Shrimp and Pasta Recipe
Angel hair pasta
1 tablespoon Pompeian OlivExtra Premium Mediterranean Blend
1/4 cup sun-dried tomatoes
1/4 cup artichoke hearts -I shredded the artichoke hearts so they would be in smaller pieces
1/4 cup kalamata olives
2 cloves garlic, minced
1. Cook Angel Hair pasta
2. In a skillet pour 1 tbsp Pompeian OlivExtra Premium Mediterranean Blend and add minced garlic
3. Add in shrimp and cook until shrimp is opaque and cooked through
3. Add in Sun-dried tomatoes, kalamata olives, and artichoke hearts
4. Cook until everything is heated through
5. serve over angel hair pasta and enjoy
This recipe will definitely be made again really soon. The Pompeian OlivExtra Premium Mediterranean Blend added a great flavor to the dish. This recipe looks like you spent a lot of time in the kitchen when in fact it maybe took me 20 minutes. It was a fast easy recipe to make and tasted amazing.
