John and I spent this past weekend road tripping along Lake Roosevelt. I don’t know about you, but when we end up spending hours on end together in the car, we start talking about random topics. One topic that came up this weekend was food combinations that we love. John mentioned how much he loved Velveeta Shells and Cheese with Ro-tel. I am pretty sure he would eat this for dinner any chance he can. I love making Velveeta Shells and Cheese since I can set aside a plain bowl for me and then make John a fun bowl with his favorite toppings. Can you tell we have very different tastes in food!
When we got back from spending the weekend traveling, I knew I needed to head to the grocery store and stock up on groceries. We have been traveling so much the past few weeks that my fridge was looking mighty bare and needed some serious help.
I had no idea there were so many varieties of Velveeta Shells and Cheese available. We found Velveeta Shells and Cheese with bacon, whole grain, 2% milk already added to it. I picked up the regular Velveeta Shells and Cheese, so we could both enjoy it.
I decided to spice up John’s favorite dish of Velveeta Shells and Cheese with Ro-Tel and add in some hamburger and the fun addition of Fritos Chips. I figured I would try and make a Tex-Mex Velveeta Shells and Cheese Recipe for John.
Tex-Mex Velveeta Shells and Cheese Recipe
2 boxes of Velveeta Shells and Cheese
1 pound of hamburger
2 cans of Ro-Tel
1. Cook Velveeta Shells and Cheese according to the box directions
2. Brown the hamburger
3. Drain the liquid out of the cans of Ro-Tel
4. Once the hamburger is browned add in the 2 cans of Ro-Tel and stir until combined
5. Combine Velveeta Shells and Cheese and the Hamburger/Ro-Tel mix in a big bowl
I added a handful of Fritos Chips to the plate to enhance the Tex-Mex flavors. They were a fun addition to dinner. I will suggest having a couple of extra napkins if you try to eat the Tex-Mex Velveeta Shells and Cheese with the Fritos. I made quite a mess as I tried to eat but it was a lot of fun!
