I made this for Thanksgiving, but this pie would fit any occasion. While it looks like a lot of work, it was really pretty easy.
Here’s what you will need to make this great Caramel Apple Bourbon Pie:
- Frozen pie crust dough
- 1 lemon
- 7-8 apples
- 1/2 cup brown sugar
- 1 Tbsp flour
- 1 tsp cinnamon
- pinch of salt
- 1 egg
- 1/2 cup sugar
- 2 tbsp butter
- 3 tbsp bourbon
- 1 tbsp water
First, make the crust. I have a post on how to do that here
Now, take 7-8 apples, core them, quarter them, and slice thinly.
Now, squeeze the lemon and pour the lemon juice over the apples. Stir, coating all of the apples. This will keep the apples from turning brown. Add the brown sugar, cinnamon and salt to the apples and mix.
Now, start layering each apple slice into the pie crust like shown. Remember, you get the look you want by facing each slice so the peel is facing up. If you want, use different colored apples and make patterns.
Set the pie in a freezer to firm.
Whisk the egg in a small bowl and then wash the crust of the pie with the egg, then bake at 400 for 25 -30 minutes.
Let the pie cool while you make the bourbon glaze. Pour the white sugar into a non-stick pan and turn the heat on to medium high. The sugar will melt. Stir continuously until the sugar begins to color.
When all the sugar is melted, add the butter, bourbon and water. AND KEEP STIRRING! Don’t worry if the water and bourbon immediately boil; the sugar is hot and it’s ok.
Use a brush to spread the caramel-bourbon glaze over the pie.
You’re done! Enjoy your pie with a scoop of ice cream.
