How cute are these Finding Nemo Cupcakes!
I thought they were perfect for today’s cupcake Saturday post! I had a baking friend make them up and send over directions so I could share them with everyone. I just love how cute they are! Now I really can’t wait for the new Finding Nemo movie to come out from Disney…..
Finding Nemo Cupcakes
1/2 C unsalted butter, room temp
2 egg whites
2 C flour
1 tsp baking powder
1/2 tsp salt
1/4 baking soda
3/4 C buttermilk
1 1/2 C sugar
1 tsp vanilla
Blue gel food coloring
-Preheat oven to 350 degrees.
-Line cupcake pan with paper liners.
-Sift flour, baking powder, salt, and baking soda together in a bowl.
-Beat butter on high for 30 seconds.
-Add sugar and vanilla extract to the butter until well combined.
-Add egg whites, one at a time, mixing after each.
-Add eggs, one at a time, mixing after each.
-Add 1/3 C flour mixture to the wet mixture followed by adding 1/3 C of the buttermilk; add 1/3 C flour mixture again then add 1/3 C buttermilk mix on low speed, add 1/3 C of flour and add the rest of 1/3C of buttermilk mix in low speed until thoroughly blended.
-Add several drops of blue gel food coloring until the desired color is reached. Stir to blend the color throughout the entire batter.
-Scoop the batter into the lined cupcake holders till 2/3 filled.
-Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
-Cool for 10 minutes.
-Remove to a wire rack until fully cooled
2 C powdered sugar
1 C unsalted sweet cream butter
2 TBSP heavy whipping cream
Blue gel food coloring
-Cream the butter and powder sugar in a mixing bowl until creamy.
-If frosting doesn’t cream add several drops of heavy whipping cream until it becomes creamy.
-Take a spoonful of frosting, turn it upside down and see if the
frosting holds to the spoon. If not add 1/2 C of powder sugar at a time and mix. Test to see if the frosting holds to the spoon, if not add another 1/2 C of powder sugar until it holds.
-Add several drops of blue gel food coloring in the frosting. Stir well.
-Scoop the frosting into a pastry bag with a frosting tip on the end. Twist
the open end of the pastry bag to push the frosting to the tip.

1/2 tsp cream of tartar
Add 1/4 C powder sugar until stiff peaks form.
Orange and black gel food coloring
Royal Icing Directions:
-Mix eggs, cream of tartar, and powder sugar on medium speed for 4 minutes.
-Locate a picture of an Nemo on Google… print the picture in color. Tape this picture with numerous Nemo on it to a cookie sheet.
-Tape wax paper (covering the copies of the Nemo)to the cookie sheet .
– If you are using the same pastry bag and or tip they will need to be cleaned after each color. (Or use zip lock bags by cutting the corner of the bag.)
– Place the icing in a bowl. Take out 1/4 of the icing and divide this 1/4 into 2 bowls. In the main bowl add orange gel food coloring until it is a bright orange.
-Using a pastry bag with a #2 tip outline Nemo then color his body and eyes in with the orange but don’t touch the black and white areas.
-In the second bowl add several drops of black gel food coloring for the accent on his body, and for the center of his eyes. Always outline first then color it in.
-In the third bowl.. white. Outline the accent parts of his body, his eyes, and teeth then color them in with white.
-Allow to dry for 5-10 hours.
-Ensure that Nemo is dry, gently touch one of the images.
-Cut the wax paper holding the completed faces into squares surrounding the image.
-If the images are dry peel them off the wax paper and place on the frosted
