Jambalaya with Ham

Ingredients

• 1 tablespoon olive oil

• 1 tablespoon butter
• 2 large onions, chopped
• 1/2 green bell pepper, diced
• 1/2 red bell pepper, diced
• 2 medium cloves garlic, minced
• 2 cups Kentucky Legend diced ham
• 1 cup uncooked white rice
• 1/2 teaspoon thyme
• 1/2 teaspoon salt
• 5 drops hot sauce (you may add more if desired)
• 1 can (14.5 ounces) diced tomatoes
• 3/4 cup chicken broth

Directions

1. Heat oil and butter in a large, heavy saucepan until butter is fully melted. Add onions, bell pepper, and garlic.
2. Cook, stirring occasionally, until ingredients are lightly browned.
3. Add ham and rice to the pan; cook until rice is well coated with oil. Stir occasionally while cooking.
4. Add thyme, salt, hot sauce, tomatoes, and chicken broth.
5. Cover and simmer until rice is tender and liquid is mostly/ fully absorbed, about 20 to 25 minutes.
6. Add more salt and pepper sauce as needed, and serve.
