Pesto Crusted Fish

Do you try the sample food at the grocery store? John and I were walking through Yokes the other day and they had a sample of fish. Normally John would not try fish because he gets worried about how it was cooked but this time he went with it. I am pretty sure the pesto was calling his name. After the first bite he turned to me and said we have to make this!

Thankfully they were passing out recipe cards so we could pick up what we needed. As an added bonus the white fish was on sale and only cost a couple of bucks to pick up! WOOHOO!!! I get a bit nervous some times trying new recipes when the ingredients are crazy expensive.

I have to say this may be one of the easiest fish recipes I have made. We had most of the ingredients at home already so that made it super quick and easy.

I really wish this Pesto Crusted Fish would have photographed better. I am not sure how to make it not look like a pile of green goop on a bed of rice. All I can say is John absolutely loved  it. He said it was super flaky and tasted amazing.

Chili’s has a great new Pick Your Pepper Menu!  John and I had dinner at the Chili’s here in Spokane to check out this great new menu. John was super excited to try one of the new entrees. He absolutely loved the Chicken Fajitas. He loved them so much that we ended going twice in a week to Chili’s!

John tried the Smoky Chipotle Chicken Fajitas – Sizzling grilled chicken, sautéed onions and bell peppers kicked-up with chipotle pesto sauce and melted Monterey Jack cheese. Topped with crispy onion strings.

Pesto Tortellini Salad Recipe

This Pesto Tortellini Salad Recipe is so easy to make!

This is the perfect recipe for summer barbecues or get together. I love making pesto dishes in the summer. The flavor is light and refreshing while still packing a great flavor.  You could easily add sun-dried tomatoes or kalamata olives to this Pesto Tortellini Salad Recipe if you wanted to give it a bit more of a Mediterranean flavor.

This recipe can be prepared ahead of time and placed in the fridge to chill before your event. This is a great recipe to make ahead of time so you do not have to stress last minute about what your are bringing.

I really like that this recipe has only 5 ingredients. It is simple and easy to make but tastes amazing. You do not have to go out and buy a ton of things to make a really great summer dish.

Pesto Tortellini Salad
Ingredients
Cheese filled tortellini, cooked and cooled
Artichoke hearts
1/3 cup olive oil
3 tablespoons red wine vinegar
1 package Knorr pesto sauce mix
Directions
Mix olive oil, vinegar and pesto sauce mix together. Mix with remaining ingredients. Chill and enjoy!

One of the great things that has come from the eat from your pantry challenge is I am now making all of our bread. When I first lost my job I started making bread. At that point I was making pretty unhealthy options because they tasted good and were fun. I made bread with pesto, gouda, pulled pork, and pretty much everything I could think of to stuff inside a loaf. Through the challenge I realized that I still have a ton of bread making supplies. We are really focused on eating healthier and trying to control what we are eating. I decided a few weeks ago to start making all of our own bread. I feel better knowing what is in the bread and not having the extra chemicals in it. I am using an amazing cook book called “Artisian bread in 5 minutes a day.” When I first started I did not think it was possible to make healthy bread in 5 minutes a day but soon found that it is super easy. The main bread takes 4 ingrediants including water to make the dough. If you have ever thought of making bread I highly recommend this book.
