Lemony Delicious! Woohoo, It is time for another Cupcake Saturday!
I can’t believe how many weeks and months we have been celebrating the weekend with cupcakes. I love it!!!
Today we are sharing this gorgeous Lemon Cupcake Recipe.
There is just something about lemon that makes me happy. It is bright, cherry and oh so delicious.
Lemon Cupcake Recipe
Cupcakes
4 egg , room temperature
3/4 cup milk
2Ā lemons, zest
3/4 cup unsalted butter, room temp.
1 3/4 cup sugar
2 1/2 cup all purpose flour
1 Tbsp baking powder
1/2 tsp salt
Frosting
1 cup unsalted butter, room temp.
4 cup powdered sugar
1Ā lemon, juiced
2 Tbsp heavy cream
Instructions
In small bowl, add egg whites, 1/4 cup buttermilk andĀ lemonĀ zest and mix well
In mixing bowl, beat butter and sugar until creamy, about 2-3 minutes.
Add in dry ingredients and mix until combined. Slowly add in egg white mixture. Beat in remaining milk.
Fill liners 3/4 full and bake at 350 degrees in the oven for 15 minutes.
Let yourĀ cupcakesĀ cool for 5 minutes in theĀ cupcakeĀ pan.
Move yourĀ cupcakesĀ to cool completely on a wire rack.
Frosting
Mix butter for 3-5 minutes until light and fluffy.
Add powder sugar, Ā lemonĀ juice and heavy cream.
Beat for 3-5 minutes until it begins to form stiff peaks
