We are now almost all of the way through January…..How are your resolutions and goals for 2014 going?
One of my goals for this year is to make sure I am making healthier dinner options. I like cheese!
There I said it…I mean seriously I love cheese. Enough so that I tend to glob it in to every recipe by the handful. This year I am re-working some of our favorite recipes so they are lighter, healthier, and well a little less cheesy.
I am so excited to be working with Tyson again. Their Grilled & Ready Chicken is perfect for easy meal prep. I decided to make a Easy Chicken Penne Pasta Bake Recipe. I know it is a mouthful to say but dang is it good!
I have had this pasta bake recipe for a while but it didn’t fit in with my 2014 goals. It had globs of alfredo sauce, even more cheese, and oh wait some more cheese to top it off. I decided to change the recipe and make a healthier version!

It is so easy to make!
The hardest part of this recipe is waiting for the pasta water to boil and the pasta to be done.
Seriously it is so easy!

Chicken Penne Pasta Bake
8 ounces penne pasta
1 jar Sun-dried Tomato and Basil Pasta Sauce
1 jar artichoke hearts, drained and rinsed
1 packet Tyson grilled chicken strips
Handful Kalamata Olives, depending on how much you love them you can add more or less
1/4 cup Italian bread crumbs
1/4 cup Mozzarella Cheese
1. Preheat oven to 375 degrees
2. Spray a casserole dish with cooking spray
3. Cook penne pasta in a boiling pot of water for a minute less than box directions
I sat the Chicken Penne Pasta Bake on the counter to cool off for a few minutes so I could take a picture. I came back to find that a chunk of it was missing.
John said it smelled so good he couldn’t wait to try it…..
