Can you believe it is January 2017! How in the world is that even possible. We made it through the holidays, we made it through New Years Eve and now it is time to look forward and enjoy the New Year! Today’s Greek Chicken One Pan Pasta Recipe is all about saving time, energy and effort.
There are so many other things to do than spend time in the kitchen over a hot stove trying to get dinner ready. I much prefer spending a little time on the couch catching up on my favorite reality tv shows. I must confess to being hooked on the Bachelor/Bachelorette. This is the show I watch every chance I get. I don’t know why but I love the drama and craziness that comes with it. We sit on the couch with a glass of wine and play a Bachelor drinking game. Each week the game changes based on who is still left on the show and what is happening.
This recipe is so perfect for any night of the week. Quick and easy to make plus the entire family will love it!
Greek Chicken One Pan Pasta Recipe
4 cups low-sodium chicken broth
3/4 lb Barilla® Rotini
2 tbsp extra virgin olive oil
1/2 tsp finely grated lemon zest
4tsp fresh lemon juice
kosher salt and pepper
1 1/4 lbs chicken breasts, cut into 1/2 inch strips
1/3 cup dill
1. Combine chicken broth, Barilla® Rotini, Olive Oil, Lemon Zest, 1 tsp salt, 1/4 tsp pepper and 1/2 cup water in a large straight-sided skillet. Make sure you use a large enough skillet to have room to stir the pasta
2. Bring to a boil over medium-high and cook, stirring occasionally, approximately 9 minutes
3. Season chicken generously with salt and pepper, add to skillet. Continue to cook, stirring, until pasta is al dente and chicken is cooked through, Approx 3 minutes
4. Remove from heat, stir in lemon juice and dill.
Garnish with lemon zest and dill, and a generous serving of olive oil.
