Most of you know I travel a lot. I am on the road on average 2-3 weeks out of the month and one of the things I worry about is John having easy meals ready for him. With him working in the park getting ready for summer I know he has a tendency to work straight through lunch and forget to eat.
What I have started doing is heading to our local Subway before I head out of town and picking up a couple of foot long sandwiches. They are the perfect lunch for John in the park. Easy to pack and they taste amazing.

You may be wondering what makes an Italian Hero sandwich so good. Don’t worry I am going to tell you! I asked John to describe the sandwich to me and he kept saying how delicious it is and then diving right back into eating. I guess I probably should have waited until after he was done with his sandwich.
But I wanted to get the info from him while it was fresh in his mind. He was more focused on eating and enjoying every bite.
The Subway Italian Hero includes Capicola which is cured pork, hand-trimmed, smoked and slow roasted then seasoned with traditional Italian Spices, black pepper, and paprika. Plus it has Mortadella which is seasoned and cured with traditional Italian Spices, garlic, and cracked peppers.
If that was not enough there is also Genoa Salami prepared in the old word traditions by dry curing it with a hint of garlic and touch of wine. Topped with Provolone, Mediterranean Oregano, oil and red wine vinegar plus your favorite veggies.
John had it with lettuce, tomatoes, pickles and onions and said it was amazing.
The Italian Hero is only available for a limited time so make sure and head to your local Subway to try this great sandwich. I went ahead and picked up a couple extras so John has them for lunch this weekend.
