I am dreaming of Hawaii and tropical sunshine right now. I figured these super fun Surboard Cupcakes were perfect for this weeks Cupcake Saturday.
A little bit tropical and a whole lot of fun! Plus how cute are these! I may not want to surf but I am all about these surfboard cupcakes.
Have you ever tried surfing? How did it go?
I do not have very good balance so I haven’t tried surfing. I am worried I will stand up and fall right over..I may have to give it a try in gentle water the next time we are in Hawaii.
1 1/2 cup all-purpose flour
1 tsp baking powder
1/8 tsp baking soda
1/4 tsp salt
1 C sugar
1/2 cup unsalted butter, softened
1 large egg
2 large egg whites
1/2 tsp vanilla extract
1/3 C buttermilk
1 1/2 Tbsp Grenadine
-Preheat oven to 350 degrees. Line cupcake pan with paper liners.
-Sift flour, baking powder, baking soda and salt in a medium bowl. Set aside.
-Using the paddle of an electric stand mixer whip the butter and sugar until pale and fluffy in the mixing bowl.
-Add in an egg, then the egg whites one at a time. Add the vanilla with the second egg white.
-Using a liquid measuring cup whisk the buttermilk and grenadine together.
-Start to mix 1/3 of the flour mixture alternating with 1/2 of the buttermilk mixture. Mix after each addition only until just combined.
-After all the ingredients are blended scoop the batter into the paper-lined cupcake pan until each tin is 3/4’s filled.
-Bake at 350 degrees for 20-25 minutes or until an inserted toothpick comes out clean.
-Allow cupcakes to cool in cupcake pan for 10 minutes.
-Remove cupcakes from pan and place each on a wire rack until completely cooled.
3/4 C butter unsalted, room temp
5 C powdered sugar
Few drops yellow food coloring
3 Tbsp pineapple juice
-Chill the bowl of the electric stand mixer. Using the paddle attachment, whip the butter until pale and fluffy.
-Add 1/4 C of powdered sugar, pineapple juice, and yellow gel food coloring.
-Set on low speed, slowly add the remaining cups of powdered sugar a 1/2 C at a time.
-Increase speed on the mixer to medium, whipping until light and fluffy.
-Test to see if the frosting can stand by taking a spoonful of the frosting, turning the spoon upside down, if the frosting stays on the spoon then it is ready. If the frosting falls off the spoon add more powdered sugar 1/2 C at a time. Test after each addition to see if frosting is ready.
-Scoop frosting into a pastry bag with a large frosting tip to frost the cupcakes.
-Start on the outside edge of the cupcake and begin frosting by following the cupcake working in a circle towards the center of the cupcake.
2 egg whites
1 C powder sugar
1/2 tsp cream of tartar
Add 1/4 C powder sugar until stiff peaks form
Blue, yellow, white, red, and green gel food coloring
-Mix eggs, cream of tartar, and powder sugar on medium speed for 4 minutes.
-Divide the icing equally into 5 bowls.
-In each bowl add 3-5 drops of one of the gel food coloring. Mix well.
-Put each color of icing into a separate frosting bag with a small tip.
-Locate a picture of a surfboard on Google. Print the picture in color. Tape this picture with small numerous images of it on it to a cookie sheet.
-Tape wax paper (covering the copies of the surfboards) to the cookie sheet. Follow the color and features as printed on the paper.
*-Using a small pastry bag fill with yellow royal icing and a #2 tip. Start by outlining the surfboard first. Fill in the surfboard with the yellow icing. Allow this to dry for 30 minutes.
-Selecting a different color of the royal icing draw designs onto the surfboard.
-Choose another color of icing, outline a different surfboard with that icing color then fill it in with that color. Allow them to dry for 30 minutes before adding and designs on to it. *
-Allow drying for 5-10 hours.
-Ensure that the image is dry, gently touch one of them with your finger if it allows you to push in on the icing allow it to dry more. If the image is dry then it will have a hard feeling not allowing you to push in on it.
-Cut the wax paper holding the completed image into squares surrounding the
-If the surfboard is dry peel the wax paper off of the surfboard and place it on the front or in the center of each of the cupcakes.
* Make a variety of different colored surfboards by repeating the directions as outlined above. Individualize each with different designs.
