We hope you all enjoyed an amazing Fourth of July this week! Did you get stuffed full of barbecue, potato salad, and all the summer good foods? We spent our Fourth of July in Alaska and it was crazy amazing. One thing we learned is most of Fairbanks and surrounding areas set off their fireworks around 1 am on the 4th. We drove into Fairbanks the night of the 4th only to realize we had missed the fireworks by a good 20+ hours. OOPS!
Even without seeing any fireworks we had an absolutely amazing time in Alaska. Our main reason for flying up to Fairbanks was to visit Wrangell-St. Elias National Park. This park has the largest landmass of all US National Parks. It is equivalent to more than 7 Yellowstone’s. We were not sure what to expect from this remote park. Some of the posts that we read made it seem like we were going out into the bush of Alaska and we would be lucky to find food while we were there.
This thankfully was not the truth though I was thankful we bought stuff to make PB&J sandwiches along the way. The roads were a bit rough and dirty as seen by our rental car but not horrible.
The payoff for these dirt roads was these amazing sweeping vistas looking out over Alaska.
There is just something so beautiful about how rugged Alaska is.
We flew out of Fairbanks at 1am on Wednesday morning and the sun had just gone down. I am not sure why this always fascinates me. though I am not sure how it would be living in the land of the Midnight Sun. How hard it would be to regulate your body clock for sleep would be interesting.
I have to admit we overnighted home and as soon as we got home took a nap. We drove a little over 1000 miles in 72 hours while in Alaska. We tried to fit in everything we could and then some.
The rest of this week has been spent on the organization of the blog and hopefully making it easier for you to navigate and find what you need. My goal this summer is to make it easier to get the recipes you are looking for and find cool new things to be entertained by.
