Cook noodles in a large pot of slightly salted water, according to the package directions.
Meanwhile, in a bowl, mix the ginger powder, sugar, sesame oil, and soy sauce. Set aside.
In a large skillet, heat the oil over medium heat. Quickly, add the garlic, carrot, pepper and mushrooms. Saute and stir continuously, until the vegetable are slightly tender.
Throw in the frozen peas and the entire bag of spinach. It seems like a lot, but it will wilt down.
Keep stirring until it wilts and the peas are cooked through.
Drain the pasta, add it to the vegetables and add the sauce at the same time.
You may need two stirring utensils at this time to fully incorporate all ingredients and sauce.
Keep tossing the ingredients until everything is well covered with the sauce.
