Add all slaw ingredients to a large bowl and toss to combine.
In a separate bowl, add all the dressing ingredients and whisk until smooth and creamy. Taste and adjust seasoning. If you like a sweeter dressing, add more honey.
Pour the dressing over the slaw and mix until evenly coated.
This is best when chilled for a few hours, tossing every hour or so.
Garnish with reserved green onions and blue cheese, if desired.
