Chocolate Blackberry Cupcakes Recipe

  • Ingredients
  • Pre-heat over at 350 degrees
  • 1/4 C unsalted butter room temp
  • 1 C sugar
  • 1 C chocolate chips
  • 2 LG eggs room temp
  • 2 LG egg yolks room temp
  • 1/2 C vegetable oil
  • 2 tsp vanilla extract
  • 1/3 C sour cream
  • 1 C flour
  • 1/2 tea salt
  • 1/2 tea baking soda
  • 1/2 C cocoa powder
  • 1/2 C whole milk
  • Blackberry Compote
  • 2 C blackberries
  • 3/4 C sugar
  • 2 TBSP Lemon Juice
  • 1 TBSP of Fruit Pectin or Corn Starch
  • Blackberry Frosting
  • 2 C. Butter room temp
  • 6-8 C Powered sugar
  • 1 cup of freshly washed blackberries smashed
  1. In a medium-sized mixing bowl or the bowl of a stand mixer, mix butter and sugar.
  2. Melt the chocolate in the microwave or in a double boiler.
  3. Add chocolate to the butter/sugar mix and mix all together
  4. Add in eggs and egg yolks one at a time mix with butter mix
  5. Add in oil, vanilla, and sour cream mix in until all combined
  6. Sift flour, salt, baking soda, and cocoa powder into a separate medium bowl.
  7. Add dry ingredients to wet ingredients, mixing all together
  8. Mix in whole milk
  9. Blackberry Compote Directions
  10. In a saucepan combine all ingredients and bring to a rolling boil.
  11. Reduce heat and simmer until compote thickens.
  12. Place to the side and let cool
  13. Blackberry Frosting Directions
  14. Add Butter, Blackberries to the mixer bowl set speed at medium
  15. Now begin to add the powdered sugar one cup at a time and beat until well blended.
  16. Increase the speed to med. speed until light and fluffy.
  17. Place frosting in a pastry bag and pipe onto the top of the cupcakes.
