Ingredients
  • 3/4 cup S&W Black Beans
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1/4 cup cocoa powder
  • 2/3 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup mini chocolate chips
  • 1/3 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup confectioners sugar for dusting on the top
Instructions
  1. pre-heat oven to 350 degrees
  2. Grease a 9×9 baking pan with butter or cooking spray

  3. Puree S&W Black Beans in a blender with vegetable oil. Add in eggs, cocoa, sugar, and vanilla
  4. Melt 1/4 cup mini chocolate chips and add to blender

    Blend until smooth

  5. In a small bowl combine flour, baking powder, and salt whisk together
  6. Add to blender and pulse until incorporated
  7. Stir in remaining 1/4 cup of chocolate chips
  8. Pour into pan and bake for 20 minutes
  9. Let cool and then dust with confectioners sugar or top with additional mini chocolate chips
