Oatmeal Chocolate Chip Cookie Cupcakes

  • 1 stick salted butter
  • 1 box Duncan Hines yellow cake mix
  • 2 packs of Quaker Maple & Brown Sugar instant oatmeal
  • 2 eggs
  • 1 bag Toll House mini chocolate chips
  1. -Preheat oven to 350 degrees.
  2. -Line cookie sheet with parchment paper.
  3. -Using a saucepan on low-medium heat add butter stirring until a golden brown...whisk consistently even after the butter has melted....
  4. -Pour melted butter into a mixing bowl...Add the cake mix, oatmeal, and eggs...beat on low speed only until all ingredients are combined.
  5. -Scoop the dough using a medium sized ice cream scoop onto the prepared cookie sheet.
  6. -Bake at 350 for 10 minutes or until the edges of the cookies begin to turn brown.
