Crock Pot Chipotle Shredded Beef

  • 2-1/2 to 3 lb. beef chuck roast trimmed
  • 1 can RoTel
  • 7 oz. can chipotle sauce
  • 1 onion chopped
  • 2 T. chili powder
  • 2 c. beef broth
  • salt and pepper to taste
  • 6 to 8 6- inch corn tortillas warmed
  • Garnish: shredded Cheddar cheese shredded lettuce, sliced black olives,
  • chopped tomato
  1. Place roast in a slow cooker. Top with remaining ingredients except tortillas and garnish.
  2. Cover and cook on low setting for 8 to 10 hours. With 2 forks, shred roast in slow cooker; stir well.
  3. Spoon into warmed tortillas; add desired garnishes. Makes 6 to 8 servings.

  5. ~ You can change up the spiciness of the recipe depending on the type of RoTel you are using.
  6. ~Rotel can normally be found in the tomato and canned vegetable aisle at Albertsons.
  7. ~If you let the dish sit longer than 8-10 hours the flavors continue to mature and it is fantastic. Just watch it to make sure you have enough liquid in the crock pot.
