Crock Pot Chipotle Shredded Beef
2-1/2 to 3
beef chuck roast
can chipotle sauce
salt and pepper to taste

Garnish: shredded Cheddar cheese
shredded lettuce, sliced black olives,
Place roast in a slow cooker. Top with remaining ingredients except tortillas and garnish.
Cover and cook on low setting for 8 to 10 hours. With 2 forks, shred roast in slow cooker; stir well.
Spoon into warmed tortillas; add desired garnishes. Makes 6 to 8 servings.
A couple of tips
~ You can change up the spiciness of the recipe depending on the type of RoTel you are using.
~Rotel can normally be found in the tomato and canned vegetable aisle at Albertsons.
~If you let the dish sit longer than 8-10 hours the flavors continue to mature and it is fantastic. Just watch it to make sure you have enough liquid in the crock pot.
