I love making a recipe and having my dear Husband tell me multiple times that it is a winner. John has been raving about this Crock Pot Chipotle Shredded Beef Recipe!

Chipotle Shredded Beef

This Crock Pot Chipotle Shredded Beef Recipe is going to made quite frequently in our house I have a feeling. John can't stop raving about it which makes me want to make it weekly. John said it has some spiciness, but it is not over the top spicy. You can still taste the flavors of everything in the recipe.

I love that the slow cooker does all the work for this great recipe. It is perfect for football parties or having people over. You can set this Chipotle beef up the night before in the slow cooker and let it cook for hours. The longer it cooks the more the flavors marinade together.

Just shred the beef and stir it before people arrive and you are ready to serve! This chipotle beef is great for a huge taco bar.

Ingredients

  • Beef chuck roast
  • Rotel
  • Chipotle sauce
  • Onion
  • Chili powder
  • Beef broth
  • Salt and pepper
  • 6-inch corn tortillas

Garnish

  • shredded Cheddar cheese
  • shredded lettuce
  • sliced black olives
  • chopped tomato

Recipe Tips

~ You can change up the spiciness of the Chipotle Beef recipe depending on the type of Rotel you are using.  You can find Rotel in mild or spicy flavors.

~Rotel can normally be found in the tomato and canned vegetable aisle

~If you let the dish sit longer than 8-10 hours the flavors continue to mature and it is fantastic. Just watch it to make sure you have enough liquid in the crock pot.

Ingredients

  • 3 lb. beef chuck roast trimmed
  • 10 Ounce RO-TEL Diced Tomatoes & Green Chilies
  • 7 Ounce Chipotle sauce
  • 1 Onion chopped
  • 2 T. Chili Powder
  • 2 c. Beef Broth
  • salt and pepper to taste
  • 8 Corn Tortillas warmed

Garnish:

  • Cheddar cheese shredded
  • tomato chopped
  • lettuce shredded
  • black olives, sliced

Instructions

  • Place roast in a slow cooker. Top with remaining ingredients except tortillas and garnishes.
  • Cover and cook on low setting for 8 to 10 hours. With 2 forks, shred roast in slow cooker; stir well.
  • Spoon into warmed tortillas; add desired garnishes. Makes 6 to 8 servings.
