  • 1– 1.5 lb Chicken Tenderloins
  • 2 Green Peppers
  • 1 Fresh Pineapple
  • Chopped Parsley for Garnish
  • Approximately 12 Skewers
  • Spice Rub Ingredients
  • 1/2 Teaspoon Ground Red Pepper
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Ground Black Pepper
  • 1/2 Teaspoon Kosher Salt
  • 1 Clove Garlic minced
  • 1/4 Cup Brown Sugar


  • Soak your skewers in water so that they don’t burn on the grill
  • Cut the chicken tenderloins into 3 or 4 pieces each (depending on tenderloin size). Toss chicken in the spice rub until all pieces are coated evenly. Let sit while you cut up your green peppers and pineapple.
  • Thread your ingredients onto the skewers, leaving about an inch of wood exposed on each end
  • Grill until chicken is cooked through.
