Ingredients
  • 1– 1.5 lb Chicken Tenderloins
  • 2 Green Peppers
  • 1 Fresh Pineapple
  • Chopped Parsley for Garnish
  • Approximately 12 Skewers
  • Spice Rub Ingredients
  • 1/2 Teaspoon Ground Red Pepper
  • 1/2 Teaspoon Smoked Paprika
  • 1/2 Teaspoon Ground Black Pepper
  • 1/2 Teaspoon Kosher Salt
  • 1 Clove Garlic minced
  • 1/4 Cup Brown Sugar
Instructions
  1. Soak your skewers in water so that they don’t burn on the grill
  2. Cut the chicken tenderloins into 3 or 4 pieces each (depending on tenderloin size). Toss chicken in the spice rub until all pieces are coated evenly. Let sit while you cut up your green peppers and pineapple.
  3. Thread your ingredients onto the skewers, leaving about an inch of wood exposed on each end
  4. Grill until chicken is cooked through.
