Chocolate Chip Coconut Rum Cookies

Ingredients

  • 2 sticks butter softened
  • 2 1/4 cup flour
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp Almond extract
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups chocolate chips
  • 1/2 cup shredded coconut
  • 1/2 cup gold rum

Instructions

  • Preheat oven to 375 degrees
  • Beat together butter, flour, sugars, egg, and extracts
  • In a separate bowl, combine salt, baking powder, soda, chocolate chips, and coconut
  • Fold mixture into the batter along with the rum
  • Drop by the spoonful onto a cookie sheet
  • Bake 10-15 minutes, until golden brown
