Ingredients

  • 2 carrots sliced
  • 1– 2 parsnips sliced
  • 2 potatoes medium, chopped
  • ½ onion chopped
  • 1 stalks celery sliced large
  • 1 sweet potato/yam large, chopped
  • 1 can chickpeas drained and rinsed
  • ½ tbsp. curry powder
  • 4 c vegetable broth
  • 1 tsp garlic minced
  • 1 tbsp. ginger diced very fine
  • pinch dried chili flakes
  • 1 bay leaf
  • as desired salt and pepper

Instructions

  • Add all ingredients to the slow cooker except the chickpeas.
  • Cook on low for 6 – 8 hours or until the vegetables are tender.
  • In the last hour of cooking, add the chickpeas and taste for seasoning.
  • Adjust if necessary.
