  • 1 tsp olive oil
  • 1/8 tsp minced garlic or to taste
  • 1/4 cup onion chopped
  • 1/4 cup celery chopped
  • 1/4 cup carrot chopped
  • 1 cup reduced-sodium vegetable broth r reduced-sodium chicken broth
  • 1/2 cup diced tomatoes with seasonings
  1. Heat oil in a small saucepan over medium-high heat. Add garlic and cook, stirring, until lightly browned.
  2. Add vegetables and sauté until tender. 
  3. Add chicken broth (or reduced-sodium vegetable broth) and tomatoes, season to taste and simmer until heated through.
