In a bowl, combine the mashed banana, coconut and oats. Mix well.
Press the mixture into an 8 x 8 baking pan
Bake for approximately 10 – 12 minutes.
Remove from the oven, shut off the heat, and sprinkle the chocolate chips on top of the Banana/Oat mixture. Distribute the chips evenly, and then place back in the oven for about 10 minutes to melt the chips. (No additional heat is needed as the residual heat from the oven will melt the chips. )
Remove from the oven again and with a knife, spread the chips over the top of the banana mixture. Place it in the fridge for about an hour for the chocolate to harden and the banana mixture to cool.
When it’s hardened, remove the bars and cut into desired sizes. Plate, and drizzle with caramel. Serve and Enjoy!
