    Firecracker Red White and Blue Cupcakes Recipe with a surprise inside!

    Can someone please explain to me how we are already a couple of weeks away from Fourth of July! Seriously wasn't it just Valentine's Day....My parents called and asked me what we were doing for the 4th and I told them I had no clue it was a month or two away. My dear Mom had to remind me that it is actually only a couple of weeks away and we had plans. OOPS! I swear this year is just going so quickly! I am so excited to share these Firecracker Red White and Blue Cupcakes!

    I mean seriously how cute are these cupcakes.

     

    Firecracker Red, White & Blue Cupcakes

    Red White and Blue Cupcakes!
    Ingredients
    Instructions

    Star Ingredients:

    ½ C unsalted butter, room temp
    2 egg whites, room temp
    2 eggs, room temp
    2 C flour
    1 teaspoon baking powder
    ½ teaspoon salt
    ¼ teaspoon baking soda
    ¾ C buttermilk
    1 ½ C sugar
    1 teaspoon vanilla extract
    Red & blue gel food coloring
    Star cookie cutter
    A small circle to make the hole in the center of the star.
    Pop Rocks candy (4-6 bags)

    Star Directions:

    -Preheat oven to 350 degrees.
    -Prepare three small cookie sheets by spraying them with PAM Spray.
    -Using a medium bowl, whisk flour, baking powder, salt, and baking soda.
    -In a separate large mixing bowl, beat the butter with an electric mixer on medium to high for 30 seconds.
    -Add sugar and vanilla extract to the butter and beat until combined.
    -Add egg whites, and then eggs one at a time, beating well after each addition.
    -Alternate adding the flour mixture and buttermilk to the butter mixture, beating on low speed until everything is mixed together. Divide the cake batter into three bowls.
    - Bowl #1...   add several drops of red gel food coloring... Stir until the red coloring is well blended.
    -Bowl #2...    add several drops of blue gel food coloring... Stir until the blue coloring is well blended.
    -Bowl #3...  this bowl remains the original white.
    -Pour each batter onto a separate cookie sheet.
    -Bake at 350 degrees for 10-15 minutes. Check to make sure the cake batter is thoroughly baked.
    - Allow the three cakes to cool on the in the cookie sheet until cool completely.
    -Using the star cookie cutter begin cutting stars in each of the three colors.  Make sure that each cake color has the same number of stars.
    -Using a small frosting tip make a hole in the white and blue stars.  Try to make the hole in the same spot in each star.
    -Make a stack of stars starting the red on the bottom then stack the white star the blue on top.  If they don't stay together use a tiny amount of frosting to hold them together.

    Frosting:

    Frosting Ingredients:

    2 C powdered sugar
    ½ C unsalted butter (sweet cream), soft
    3 tablespoon heavy whipping cream

    Frosting Directions:

    -Mix soften butter in mixing bowl.
    -Add powdered sugar ½ C at a time.
    -Mix until the ingredients form small pebbles
    -Add 1 tablespoon of heavy whipping cream if frosting is not creaming.
    -Mix until it forms peaks.
    -If it doesn't form peaks add ½ C more powdered sugar and mix well... until you can take a spoonful of the frosting turning the spoon upside down and the frosting stays on the spoon.
    -Spoon the frosting into a pastry bag with a medium size tip....
    -Fill the hole in the middle of the white and blue cake stars with ⅓-1/2 pack of Pop Rocks.
    - Top it off with a dollop of white frosting on top.
