A few years ago I made Hoppin John in the slow cooker because I thought it was so much fun it included my husband John's name. LOL
I have to admit that at this point in my life I didn't realize how many traditions there are surrounding Black Eyed Peas and New Year. We received a ton of emails and social media messages around new years and I had to look up the traditions because I didn't realize we should be making it for new years.
Now we know that black-eyed peas are supposed to bring good luck for the year when eaten on New Years Day. I make this salad on New Years Day every year now. It is so easy to throw together and really anything that could bring an extra bit of luck is always welcome.

We use canned black eyed peas but you can easily use dry black eyed peas depending on what you have.
This salad is so dang easy to prepare! All you have to do is combine the black eyed peas and other ingredients in a bowl and stir. Everyone loves this salad because it is so fast and easy!
