It was so rough taste testing this amazing drink!
But I did it just for you!
I found this recipe in the 200 Easy Mexican Recipes: Authentic Recipes From Burritos to Enchiladas. This cookbook is filled with fantastic recipes including this seriously yummy Margarita Pie!
Are you ready to celebrate with a Cactus Colada?
1/2 cup sweetened flaked coconut
1 cup unsweetened pineapple juice
1/2 cup gold tequila
1/2 cup cream of coconut
juice of 2 limes
3 to 4 cups cracked ice
1. Toast coconut at 350 degrees on a baking sheet for 6 minutes. Make sure to check your coconut every few minutes.
2. Blend Pineapple Juice, tequila, cream of coconut, lime, and 3 cups of ice until smooth.
3. Pour into glasses and enjoy
I found these cactus margarita glasses at the dollar store. They are perfect for summer and Cinco De Mayo.
