Mini Baked Alaska is so easy to make and they taste amazing! You will not believe the short cuts we put into this recipe to save time!

Mini Baked Alaska Recipe
One of my favorite parts of being on a cruise ship is the meals. There is always something new to try. On one of our cruises, we were having dinner and all of a sudden the lights dimmed and we heard banging. Now, this is not the noise you expect or hope to hear during a cruise vacation. All of a sudden the staff appeared carrying platters of desserts. They were hooping and hollering and just having a good ole time. We were looking at each other wondering what the heck deserved all of this noise and commotion and then we found out...Baked Alaskas!
The Baked Alaskas have become one of my favorite treats on our cruise vacations, one for the pageantry that normally goes with them and two for the seriously yummy flavor. I decided to make Mini Baked Alaska and recreate our favorite cruise dessert at home.
Ingredients
- Egg whites
- Cream of tartar
- Salt
- Sugar
- Vanilla extract
- Pound cake
- Klondike Ice Cream Bars
Baking Sheet - I like to use baking sheets with sides so there is no way I can be clumsy and have the cookies slide right off into the oven {not that I want to admit that it has happened but I did learn my lesson.}
Parchment Paper - I am a huge fan of using parchment paper to make clean up and serving so much easier.
Heat resistant potholdersย - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.
Directions
1. Preheat oven to 400 degrees
2. Line a baking sheet with foil, chill 6 dessert plates
3. To make the meringue topping combine egg whites, cream of tartar, and salt and beat until soft peaks form.
4. Gradually add in sugar until stiff peaks form, add the vanilla and mix well

5. Trim pound cake pieces to the same size as the ice cream bars
6. Place pound cake on a baking sheet, top each piece with a Klondike Bar

7. Spread meringue over each sandwich sealing completely, make decorative peaks at the top
8. Bake in preheated oven for about 4 minutes until lightly browned

9. Transfer to chilled dessert plates and serve immediately

- 1 Pound cake cut into ยฝ inch thick slices
- 6 Klondike Ice Cream Bars
Instructions
- Preheat oven to 400 degrees
