Just in time for the big game and having everyone over here is a super easy recipe for Cheesy Bacon Potato Skins! After making this recipe I am pretty sure I will never order Potato Skins at a restaurant again.
Oh my goodness these are so easy and taste amazing!
Cheesy Bacon Potato Skins
4 baking potatoes, cut in 1/4′s
1/4 cup sour cream
Ranch dressing dry mix or garlic powder (depending on your choice)
1 cup shredded cheddar cheese
Sliced Green Onions
Sliced Bacon pieces
1. Bake potatoes until you can cut them. I did 4 potatoes for 14 minutes in the microwave. Remember to cut into the potatoes so they vent while cooking
2. Cut the potatoes into 1/4′s and scoop the potato down to the skins
3. Combine Potatoes with sour cream and either garlic powder or ranch dressing mix pack
4. Fill skins with mixture
5. Sprinkle with cheese and bake at 375 degrees for 12-15 minutes, until cheese is melted
I broiled mine at the end for a few seconds to get the nice brown color on the cheese
Garnish with green onions or bacon bits
