    I am a self-confessed cookbook addict. I read cookbooks like they are a gossip magazine that I can't put down. It is not unusual to find me sitting on the couch with multiple cookbooks around me. You can imagine my over the top excitement when the new Taste of Home Recipes Across America arrived on my doorstep.

    HELLO, 735 amazing recipes from the readers of Taste of Home! ย You may laugh a bit when you see all of the tabs that I put on this cookbook as I was reading it. I came across this recipe for Potato Chip Cookies and had to try it first thing.

    Who would have thought combining potato chips and butterscotch chips into a cookie would be so dang delicious. If you would have told me I was going to bake with potato chips I might have shaken my head and giggled a bit.

    When I say I love this cookbook I mean truly love it.

    I marked so many recipes with tabs that I had to go back...and prioritize the recipes I wanted to try out first.

    There are so many amazing recipes in this cookbook! The cookbook is divided by sections of the United States and includes fun background information on the recipes and area.

    I learned that George Crum is said to have created the potato chip while working at Moon's Lake House a resort in Saratoga Springs, New York.

    There is a huge variety of recipes in this cookbook! Everything from simple cocktail recipes to delicious desserts and everything in between. I was really excited to see our family favorite holiday treat Krumkake in the cookbook.

    This cookbook is going to be my go-to cookbook as I prepare for the holidays and try out new recipes.

    Ingredients

    • 1 cup Butter softened
    • ยพ cup Brown Sugar packed
    • ยพ cup White Sugar
    • 2 Eggs beaten
    • 2 cups All Purpose Flour
    • 1 Teaspoon baking soda
    • 1 cup Butterscotch chips
    • 2 cups potato chips crushed

    Instructions

    • Pre-heat oven to 375 degrees
    • Cream together butter and sugar in a large bowl
    • Beat in eggs, flour, and baking soda
    • Fold in butterscotch chips and potato chips
    • Drop by rounded tablespoon onto a lightly greased baking sheet
    • Bake for 10-12 minutes

      I've been making cookies for over 30 years now and these cookies were some of the first cookies I started to make. Nobody could believe they had potato chips in them. They are the best!

      My sister used to make a potato chip cookie but it didn't have butterscotch chips and it had a lot of powdered sugar and they melted in your mouth...I asked her about them and she no longer has the recipe. These are definitely worth a try!
