    Crock Pot Bacon Wrapped Potatoes Recipe

    I keep hearing everything is better with bacon...so I figured why not wrap tiny fingerling potatoes in bacon to make a fun side dish or appetizers.  I used the crockpot because it is my favorite appliance in the kitchen and saves me so much time and well dishes. These crock pot bacon-wrapped potatoes take a couple of dishes but not a ton and are so worth it.

    Ingredients

    • 1 pound fingerling potatoes
    • 2 Tablespoon Olive Oil
    • 1 Tablespoon fresh thyme minced
    • ½ teaspoon Black Pepper
    • ½ pound Bacon cut in half
    • ¼ cup Chicken Broth

    Instructions

    • Toss potatoes in oil, thyme, and pepper in a large bowl. Wrap slice of bacon around the potato tightly
    • Heat a large skillet over medium heat, add potatoes, reduce heat to medium-low. Cook until light brown and bacon has tightened around the potato.
    • Place in crock pot and pour in chicken broth, cook on high for 3 hours.
