Grilled Balsamic Chicken Skewers Recipe

Can we just take a moment to celebrate all that is summer!  The warm weather, the cool drinks, the time spent outside manning the barbecue! Yes, yes, and YES! I HEART SUMMER!  There is just something amazing about cooking your food outside and enjoying the warm summer evenings at home. You can whip up these Grilled Balsamic Chicken Skewer Recipe in no time at all and enjoy a casual night at home!

Grilled Balsamic Chicken Skewers

Ingredients

1 pound boneless, skinless chicken breasts

3 red bell peppers, chopping into large pieces

1 20oz can of pineapple chunks

½ cup Newman's Own Balsamic Dressing

Couscous for plating

Wooden Skewers

Directions

1. Soak wooden skewers for a minimum of 30 minutes before using

2. Cut chicken breast into pieces, marinate in ¼ cup of Newman's Own Balsamic Dressing for 30 minutes

3. Cut bell peppers into large chunks, drain pineapple and place in a bowl

4. Turn on grill and allow it to heat up

5. Skewer chicken, pineapple, and pepper in alternating placements on skewers, place in a clean new pan

6. Pour ¼ cup of Newman's Own Balsamic dressing over skewers

7. Grill until chicken in cooked through

Remember to bring a new plate for the skewers after they have cooked.

Plate on top of Couscous and enjoy!

Ingredients

    What a great recipe to try out this summer. We love to grill and this will smell and taste great right off the heat. Everyone around here loves a good balsamic vinaigrette and this one sounds delicious!

    I heart summer, too and if only I could grill every single day during the hot months, I would. The chicken skewers look so delicious. Chicken and pineapple is a great combination. I like easy recipes like this.

    Wow these look so delicious and fairly easy... probably something I could manage making, though they wouldn't look as good as yours! I haven't tried this particular flavour of dressing but it seems like a great one for marinating chicken! Thanks so much for sharing 🙂

    Those grilled chicken skewers came out fantastic! They look easy enough for me to do too. I've never tried grilling vegetables, except corn. I bet they tasted fantastic! I'll have to try this next time we bbq!

    Nothing says summer like like grilled chicken skewers. I love having these as they work well with my low carb diet. I've eyed Newman's a few times but didn't purchase it. I may have to test it out now which the season is moving into full swing.

    Nothing says summer better than kabobs! My family would love these. I'm vegan but I'd be all over the pineapple and peppers. 🙂

      Cathi, I am vegetarian and that is exactly what I did. My Husband loved the ones with the chicken and I made veggie ones for me. So good
