Easy Cheesy Dorito Chicken Casserole

There is just something so perfect about making a casserole with Dorito chips in it. The perfect mix of comfort foods in a casserole dish. A fun new twist on classic casseroles that can be changed up depending on what your mood is.

I used Nacho Cheese Doritos for this Chicken Dorito Casserole but you could spice it up with Cool Ranch Doritos or go even spicier with Flamin Hot Doritos. I love that you can adapt this Doritos Casserole to your favorite flavors.

Every time I make a Doritos Casserole I think of new things I want to add or change with the recipe.

That is one of my favorite things about cooking is you can adapt a recipe to your favorite flavors, what you have in your pantry or what sounds good in that moment.

Right now so much of our cooking is based on what we have been able to find in the stores or have in our pantry.

It feels like grocery stores are starting to be more fully stocked than they have been in the past few months. When I went grocery shopping yesterday I was even able to find yeast which felt like a huge win after months of searching.

Granted I had to buy 2 pounds of it at Costco but at least I have yeast now. Not that I need it for this recipe but I feel like it may be time to break out and make homemade pizza dough and a few other bread recipes.

I really hope your family will love this recipe as much as we do. My husband always tells me it is one of his favorites.

He shared his favorite Frito Taco Casserole on his website so I figured it was time I shared this Chicken Dorito Casserole here.

Ingredients

  • Nacho Cheddar Doritos
  • Rotisserie Chicken/Cooked Chicken
  • Butter
  • Onion
  • Cream Cheese
  • Cream of Chicken Soup
  • Rotel Tomatoes
  • Black Beans
  • Chili Powder
  • Cumin
  • Mexican Cheese Blend Cheese/ Cheddar Cheese

Optional toppings- Sour Cream, cilantro, salsa, additional tortilla chips, Jalapeno Peppers, or a packet taco seasoning.

Rotel - You can use mild or Spicy Ro-tel Tomatoes and Diced Peppers.

Equipment Needed

9×13-inch baking dish - We like to make this Dorito Chicken Casserole in a 9x13-inch baking dish so it bakes perfectly.

Non-stick cooking spray

Medium saucepan 

Large bowl

Large Spoons

Recipe Tips

You can easily change the flavor of the bag of Dorito Chips you use in this recipe. There are so many fun options now available. We use Nacho Cheddar since we normally keep them in the pantry for the days we want a salty snack.

A Costco rotisserie chicken or grocery store chicken works great. You can also cook shredded chicken breast in the crockpot and use it in this casserole. It is up to you whatever is easiest and makes your life less stressful.

You can add corn, kidney beans, or other beans for more bulk and flavors if you would like them.

Make sure you get the cream cheese melted into the chicken mixture. You don't want to have someone take a bite of casserole and get a whole mouthful of just cream cheese.

Use the best Mexican shredded cheese you can find. The better the quality the better it melts and tastes in this casserole.

You can use crushed chips or full size depending on how you want your casserole to look. I tend to crush them into medium size pieces.

For a boost of flavor, you can mix in taco seasoning into the chicken mixture.

Green chiles can also be added for a spicy kick. This recipe really can be adapted to your favorite flavors easily.

Don't forget to preheat oven to 350 degrees.

Store covered in the fridge.

Ingredients

  • 1 Tablespoon Butter
  • 1 Onion medium, diced
  • 4 oz Cream Cheese
  • 4 cups Chicken cooked and shredded
  • 21.5 oz Cream of Chicken Soup 2 (10.75oz cans)
  • 20 oz RO-TEL Diced Tomatoes & Green Chilies 2 (10 oz cans)
  • 15 oz Black Beans
  • 1 Tablespoon Chili Powder
  • 1 teaspoon ground cumin
  • 9 ¾ oz Doritos
  • 2 cups mexican cheese Shredded

Instructions

  • Preheat oven to 350 degrees
  • Melt butter in a large saucepan, add in onions and cook until soft
  • Add in cream cheese, cream of chicken soup, chicken, rotel, black beans, chili powder and cumin. Mix together
  • Stir chicken mixture until cream cheese has melted
  • Spray non-stick spray in a 9x13 casserole dish. Spread ⅓ of a bag of Doritos in the bottom of the dish.
  • Spread ½ of chicken mixture over the 1st layer of Doritos. Top with 1 cup of shredded Mexican Cheese.
  • Spread remaining chicken mixture over the cheese, top with Doritos and then top with remaining cheese
  • Bake for 30 minutes
