Funfetti Cake Mix Cookies

I love that you only need a few ingredients to make these cake mix cookies. A box of cake mix, oil, and eggs and you are ready to start baking!

These cookies can be served with just the cake mix or you can add in so many other fun flavors. We love adding in more sprinkles, dipping them in white chocolate, and adding more sprinkles, or frosting them with cream cheese icing or Funfetti Icing.

One thing I love about these cookies is they only take pantry staples to make them. I try to keep a cake mix or 5 in the pantry at all times so we are always prepared in case we want to whip up a batch of cake mix cookies, cupcakes, or something delicious.

I mean how can you go wrong when all you need is 1 box of Funfetti cake mix, a couple of eggs, and some vegetable oil! The entire prep process is less than 5 minutes and you have cookies baking in the oven. On a good day, you can go from thinking about cookies to enjoying a warm cake mix cookie in less than 20 minutes.

There are not many recipes that can go from dreaming about warm cookies to actually having them in hand that quickly.

Ingredients

Funfetti Cake Mix - We used a Pillsbury Funfetti Cake Mix. If you don't have a Funfetti cake mix you can use a white cake mix or chocolate cake mix and add in sprinkles.

Vegetable Oil

Add-ins - chocolate chips, Funfetti Icing, additional sprinkles

Equipment Needed

Large Bowl - Make sure you use a large enough bowl that you have space to get all of the ingredients mixed together.

Wooden spoon - This dough is pretty thick. You will want to use a spoon that is sturdy enough to really mix into the dough.

Cookie Scoop - An ice cream scoop or cookie scoop will help portion out the cookie dough so it is even. I like that it also helps me make sure the cookies are similar when I package them together.

Parchment Paper - I am a huge fan of parchment paper. My husband likes to tease me that I will find a way to use parchment paper for almost any recipe.

Baking Sheet -  I like to use baking sheets with sides so there is no way I can be clumsy and have the cookies slide right off into the oven {not that I want to admit that it has happened but I did learn my lesson.}

Cooling Rack - For years I tried to use stacking cooling racks and they just never worked for me. I finally went with a large single-layer cookie cooling rack and it has been so nice.

Recipe Tips

Try not to over-mix the dough. You want to mix until combined but not over mix to the point the sprinkles smear all over the place.

To make your Confetti Cookies really have a pop of color you can roll dough in additional sprinkles right before baking them. This will help make sure there are sprinkles on the top of your cookies and not just baked inside.

Bake until the edges are golden brown but the middle is still soft. I like to undercook the cookies just a tiny bit and let them rest on the baking sheet for a few minutes. This gives them a super soft oh so yummy texture.

You can chill the dough for 20 to 30 minutes in the fridge to help it hold its shape while baking.

A parchment-lined baking sheet will help make it really easy to move these cookies to a cooling rack.

These funfetti cookies can easily be frozen. Just make sure they are completely cooled before adding them to a freezer bag and placing them in the freezer.

I know I said extra sprinkles if desired but really can you have too many sprinkles.

If you want flatter cookies you can tap the dough down with a clean glass.

  • 15.25 Ounce Funfetti Cake Mix
  • ⅓ cup Vegetable Oil
  • 2 Eggs

Instructions

  • Preheat oven to 375 degrees
  • Combine ingredients in a large bowl. Mix until combined
  • Scoop onto a parchment lined baking sheet. Bake for 8 minutes until edges are light brown.
