Lemon Cake Mix Cookies

So easy to make, so delicious, and so fun for summer! The perfect trifecta for a cookie if I do say so myself 🙂


Plus they only take 7 minutes to bake in the oven so you don't have to heat up your house for hours on end making a sweet treat. LOVE IT!

These Lemon Crinkle Cookies are so dang easy to make! It literally takes minutes to whip them up in a big bowl and get them in the oven. I try to keep everything we need for these cookies on hand in the pantry. They are so delicious and easy!

Ingredients needed to make Lemon Crinkle Cookies

  • Yellow or Butter Cake Mix
  • Eggs
  • Instant Lemon Pudding
  • Lemon Juice
  • Vegetable Oil
  • Powdered Sugar

Equipment Needed

Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.

Cookie Scoop - A cookie scoop makes it so easy to get consistent cookies that all look great together.

Parchment Paper

Baking Sheets - We are huge fans of these baking sheets with sides. You don't have to worry; you will remove the cookies from the oven and have them slide right off.

Heat resistant potholders - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

Ingredients

  • 1 package yellow cake mix
  • 2 Eggs
  • 3.4 oz Lemon Pudding
  • 1 Tablespoon Lemon Juice
  • ⅓ cup Vegetable Oil
  • ½ cup Confectioners Powdered Sugar
US Customary - Metric

Instructions

  • In a large bowl, mix together the cake mix, eggs, dry lemon pudding mix, lemon juice, and vegetable oil. Stir until everything is incorporated.
  • Drop the batter by teaspoonful into a bowl with powdered sugar and coat the ball. Place on a greased cookie sheet.
  • Bake at 350 degrees for around 7 minutes or until the bottoms of the cookies begin to get very slightly brown.

      Could you use a lemon cake mix if can would you still add lemon juice?

        You could def use a lemon cake mix. The cookies may taste super lemony but that is never a bad thing.
