3 Ingredient Banana Bread

When it comes to comfort food there is just something wonderful about hot fresh banana bread. Your house smells amazing while it is cooking and I haven't met many people who don't enjoy a warm slice of banana bread with a bit of butter on it.

The best part about this three-ingredient banana bread is it is made with pantry staples. You don't have to worry if your baking powder is fresh or if your baking soda has picked up any extra flavoring. All you need is ripe bananas, a cake mix, and a couple of eggs. That is it!

I try to keep extra cake mixes in the pantry year-round because you never know when you will have a day you need to whip up cupcakes or other cake mix recipes.  Cake mixes are so versatile and can be used as the base for cookies, bread, cupcakes, and so many other great baked goods.

Ingredients Needed

  • Ripe Bananas
  • Cake mix
  • Eggs

Add-ins - Chopped Walnuts, Peanut Butter, Vanilla extract, or Chocolate chips

Cake Mix - You can easily switch this recipe up a bit and use a chocolate cake mix, spice cake mix, or the yellow cake mix we used.

Equipment Needed

Large Bowl - Make sure you use a big enough bowl that you have space to get everything mixed together. You will see in the video I made that I totally misjudged the bowl size and had to switch halfway through to get everything mixed together.

Hand Mixer - I am a huge fan of using a hand mixer to get everything mixed together while baking. It takes care of mixing quickly and you can move on to getting your bread in the oven.

Bread Pan - Make sure to use a good size bread pan or a couple of smaller loaf pans.

Non-stick Spray - You will want to use a good non-stick spray on your bread pan so your banana bread easily comes out of the pan after baking.

Recipe Tips

You can make this recipe in a regular bread pan or mini loaf pans. You will want to decrease the baking time to 35ish minutes for mini loaf pans depending on their size.

Don't forget to preheat the oven to 350 degrees.

Mash bananas in a large bowl so you have space to add in the eggs and cake mix.

Cool completely or just warm to make it easier to slice this banana bread.

This banana bread tastes great with a bit of butter on it or even jam.

If your bread comes out a bit misshapen like the loaf pictured above don't worry! Once you slice the banana bread you won't even notice that it is a bit misshapen.

This is in the oven right now! I had butter cake mix on hand and I think it will add to the richness.
