    I tend to keep a refrigerator pie crust in the fridge all the time especially around the holidays. You never know when you will need to whip up a pie quickly.


    When we end up having leftover pie crust I love making these easy Pie Crust Cookies.

    You can make these cookies with jam, with cinnamon and sugar, or any topping you love. They are perfect for dipping into sweet dips or chocolate.

    These easy cookies can be made in a couple of different ways. It is up to you how you want them to look.

    If you are looking for a flat dippable cookie you can make these pie crust cookies into fun shapes with cookie cutters.

    If you are looking for a cookie that looks more cookie-like you can roll these up and cut them so they look like mini cinnamon roll cookies.

    Ingredients Needed

    • Pie Crust - homemade or refrigerated pie crust
    • Cinnamon
    • Sugar
    • Butter or butter spray

    I used butter spray because it is easy and quick. You can easily melt butter and use a pastry brush to brush it over the pie crust.

    You can change out the cinnamon for brown sugar if you prefer that flavor. These truly can be customized to the flavors you enjoy.

    Equipment Needed

    Cookie Sheet - I like to use baking pans that have sides for these cookies so they can't roll off when I pull them out of the oven.

    Cookie Cutters - If you want to make fun shapes or even shapes you can use a cookie-cutter. These heart cookie cutters are perfect for Valentine's Day.

    Parchment Paper - I am a huge fan of parchment paper! It makes clean up so dang easy.

    You can make these pie crust cookies in any shape you want. If you are going to use them for dipping into a sweet dip like this praline dip you can cut them into squares or strips to make them perfect for dipping.

    Make sure to bake the scrap pieces they still taste good even if they are a funky shape.

    You can double the cinnamon and sugar if you want sweeter cookies.

    A simple powdered sugar glaze tastes great spread over these cookies. Just combine 1 cup of powdered sugar with 2 teaspoon of milk until you get the consistency you are looking for.

    Ingredients

    • 14.1 oz refrigerated pie crust
    • ยผ cup White Sugar
    • 1 Tablespoon Ground Cinnamon

    Instructions

    • Preheat oven to 350 degrees
    • Combine sugar and cinnamon in a bowl and set to the side
    • Unroll 1 pie crust, spray with butter spray, sprinkle cinnamon sugar mix over the top.
    • Flip the dough to the other side and repeat butter spray and cinnamon sugar mix
    • Cut into strips or circles, place onto a parchment lined cookie sheet.
    • Bake for 10-12 minutes, allow them to cool on the baking sheet so they harden when they come out of the oven.
