Going to try this. Sounds great. What about Frito casserole?

This was so great! I substituted ground turkey instead of beef for a healthier option. Other than that, I followed the recipe exactly and found I did not like the texture of the tortillas at all. I used soft taco size flour ones if anyone is wondering. They were very mushy and slimy, and I actually ate AROUND them. If you need to incorporate tortillas, I would (and did) fill some with this and roll it up burrito style. My personal favorite though is to eat this dip style with tortilla chips. Thank you for the recipe!

I added cream of cheese instead of onion. I was thinking about adding retired beans to it but was afaid it would dry out. Hope this is good!

My only suggestion is maybe to wait until an hour before serving to add the tortilla strips. If you add them in the beginning, they will turn to mush by the time you serve it. It’s such a quick, easy, and delicious recipe though! Thanks for sharing this.

Made this tonight for dinner. Turned out amazing! My only suggestion would be to hold off adding the tortillas till closer to the end to prevent them from turning to mush.

I used flour tortillas. You could easily use corn tortillas if you prefer.
