This Crock Pot Tater Tot Breakfast Casserole Recipe is probably not going to win any awards for looking amazing. It's true this dish looks like a mash-up of a lot of stuff on a plate. Which it is but trust me you have to get past the mash-up and take your first bite! SO GOOD!
The combination of tater tots, ham, peppers, cheese and eggs is delicious! My parents were over when I made this and my Dad took one look at his plate and gave me this look. You know the look of "seriously you want me to eat this!" Well a funny thing happened. My Dad took one bite and all of a sudden we didn't hear from him for a few minutes because he was head first into his plate eating every last bite.
I know it is not the prettiest recipe we have shared but it really does taste amazing! Plus it is super easy to make and the crock pot does all the work!
Tater Tot Breakfast Casserole Crockpot Recipe
- Frozen tater tots
- Yellow onion
- Green bell pepper
- Red bell pepper
- Sharp cheddar cheese
- Large eggs
- Garlic powder
Remove the ham to make this a vegetarian crockpot recipe.

Crock Pot Tater Tot Breakfast Casserole Recipe
- Place ½ of the tater tots in the bottom of the crock pot
- Top tater tots with ½ of the ham, onion and bell pepper, top with ½ the cheese
- Repeat with the rest of the tater tots, ham, onions, bell pepper, and cheese
- Whisk together eggs, milk, garlic powder, salt and pepper. Pour over the top
- Cook on low for 10 hours
- Slow cooker
