    Hello YUM!!!! This Southwest Crock Pot Chicken Chili Recipe is soooooo good!

    I am so happy to be diving deep into chili season! This Crock Pot Chicken Chili Recipe is just so dang good! Plus it is a fun alternative for Cinco De Mayo or really any night of the week.

    Southwest Crock Pot Chicken Chili Recipe

    We have been having so much fun making chili recipes with the crockpot. So much so that we made an entire list of Crock Pot Chili Recipes to try out!

    You just can't go wrong with a hot bowl of chili on a cold winter night. So filling and so easy to make which I love. You can enjoy more time under the covers on the couch relaxing instead of having to stress about dinner.

    Ingredients

    • Chicken breast
    • Stewed Tomatoes
    • Onion
    • Red Kidney Beans
    • Corn Niblets
    • Tomato paste
    • Mushrooms
    • Cumin
    • Chili powder
    • Cayenne powder
    • Garlic, minced
    • Salt and pepper

    Optional: Adding some shredded cheddar cheese as a garnish at the end along with the sour cream.

    Ingredients

    • 1 lb. Chicken Breast cut into small chunks
    • 28 oz Stewed Tomatoes
    • 1 Onion medium, chopped
    • 15.5 oz Red Kidney Beans rinsed
    • 15.25 oz Corn Niblets
    • ¼ C Tomato paste
    • 10 oz Mushrooms drained
    • 1 teaspoon Cumin
    • 1 ½ Tablespoon Chili Powder
    • ¼ teaspoon Cayenne Pepper more if desired
    • 1 teaspoon Garlic minced
    • Salt and pepper to taste
    US Customary - Metric

    Instructions

    • Season chicken breast with salt and pepper
    • Place chicken in the slow cooker, along with onion, full can of tomatoes (do not rinse), corn, beans, and mushrooms. Mix well
    • Add the garlic, chili powder, cumin, cayenne, and more salt and pepper
    • Mix in the tomato paste, combining it well with the rest of the ingredients.
    • Cook on low for 5 – 6 hours.
    • Upon serving, dollop some sour cream on top and Enjoy!
    • Optional: Adding some shredded cheddar cheese as a garnish at the end along with the sour cream.
