Hello YUM!!!! This Southwest Crock Pot Chicken Chili Recipe is soooooo good!
I am so happy to be diving deep into chili season! This Crock Pot Chicken Chili Recipe is just so dang good! Plus it is a fun alternative for Cinco De Mayo or really any night of the week.
We have been having so much fun making chili recipes with the crockpot. So much so that we made an entire list of Crock Pot Chili Recipes to try out! You just can’t go wrong with a hot bowl of chili on a cold winter night. So filling and so easy to make which I love. You can enjoy more time under the covers on the couch relaxing instead of having to stress about dinner.
Southwest Crock Pot Chicken Chili Recipe
Ingredients
1 lb. Chicken breast, cut into small chunks
1 can Stewed Tomatoes, (28oz)
1 medium Onion, chopped
1 Can Red Kidney Beans (rinsed)
1 Can Corn Niblets
¼ C Tomato paste
1 Can Mushrooms, drained (10 oz
1 tsp Cumin
1 ½ Tbsp. Chili powder
¼ tsp Cayenne powder (more if desired)
1 tsp Garlic, minced
as desired Salt and pepper
Directions
1. Season chicken breast with salt and pepper
2. Place chicken in the slow cooker, along with onion, full can of tomatoes (do not rinse), corn, beans, and mushrooms. Mix well
3. Add the garlic, chili powder, cumin, cayenne, and more salt and pepper
4. Mix in the tomato paste, combining it well with the rest of the ingredients.
5. Cook on low for 5 – 6 hours.
6. Upon serving, dollop some sour cream on top and Enjoy!
Optional: Adding some shredded cheddar cheese as a garnish at the end along with the sour cream.
