My Mom recently shared with me a cook book she received from my Dad’s Mom. The cookbook is from Grand Forks, North Dakota and it at least 50-60 years old. I found this recipe for Peanut Butter Balls in the cookbook. The recipe originally called Peanut Butter Logs but I thought they would be better formed into balls. I wasn’t sure how you would serve them as a log. I pictures trying to pick it up and knaw on the end and that just is not a cute picture at all.
John absolutely loved these Peanut Butter Balls. He kept grabbing one or two each time he walked through the kitchen. I loved that they are so crazy easy to make and you do not have to turn on the oven. I think these will be perfect for snacks or during the summer when the last thing I want to do is turn on the oven.
Peanut Butter Balls
2 cups chunky peanut butter
2 cups powdered sugar
4 tbsp, melted butter
5-6 cups rice krispies
2. Mix in as much of the Rice Krispies as you can. I finally started using my hands after trying with a wooden spoon. I was not getting anywhere with the spoon but making a mess with Rice Krispies flying through the air all over the kitchen.
3. Shape into balls
Let us know if you try the recipe and if you decide to make Peanut Butter Balls or Peanut Butter Logs. I would love to see how they turn out. Feel free to comment on this post so we know how they turned out. 🙂
