I love blueberries!

No question about it ...I love them. They taste ah-mazing. They are good for you. Oh and let's not forget they taste amazing.

I have not made blueberry muffins in years. I don't know why I haven't made them. Scratch that I do know why.

It is because I tend to eat the entire bowl of them before anyone else gets one.

I love eating blueberries all year long. I keep a stock of Blueberries in the freezer at all times.

They taste great on their own, they are good for you and I can pick them up at the grocery store year-round.

Did you know that blueberries are only 80 calories a cup! That is a whole lot of goodness for only 80 calories.

Blueberries are also high in vitamin C and contain polyphenols which are antioxidants and anti-inflammatory. Blueberries are the perfect shade of blue to compliment a rainbow of colors and flavors on your plate.

Blueberry Muffin Recipe

Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Butter
  • Sugar
  • Eggs
  • Milk
  • Vanilla extract
  • Blueberries

Homemade Blueberry Muffin Recipe

How to make Homemade Blueberry Muffins from Scratch.

Ingredients

  • 4 cups All Purpose Flour
  • 4 Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 1 cup Butter softened
  • 2 cups White Sugar
  • 4 Eggs
  • 1 cup Milk
  • 2 Teaspoon Vanilla Extract
  • 2 cups Blueberries frozen

Instructions

  • Combine flour, baking powder, and salt in a large bowl.
  • Cream butter and sugar in a large bowl. Add in eggs, milk and vanilla, mix well.
  • Stir in dry ingredients until just moistened, fold in frozen blueberries
  • Fill muffin cups ⅔ full.
  • Bake at 375 degrees for 20-25 minutes

      Hi, I have not tried fresh blueberries. You would have to be really careful they don't smush in the mix.
