I love blueberries!
No question about it …I love them. They taste ah-mazing. They are good for you. Oh and let’s not forget they taste amazing.
When I was asked by the US Highbush Blueberry Council to cook with blueberries I jumped at the chance. I spent a few days trying to think of what to make and then it hit me…..
I have not made blueberry muffins in years. I don’t know why I haven’t made them. Scratch that I do know why..
It is because I tend to eat the entire bowl of them before anyone else gets one.
Since my parents were coming over this week I figured I would have to share them.
I love eating blueberries all year long. I keep a stock of US Highbush Blueberries in the freezer at all times.
They taste great on their own, they are good for you and I can pick them up at the grocery store year round.
Did you know that blueberries are only 80 calories a cup! That is a whole lot of goodness for only 80 calories.
Blueberries are also high in vitamin C and contains polyphenols which are antioxidants and anti-inflammatory. Blueberries are the perfect shade of blue to compliment a rainbow of colors and flavors on your plate.

Blueberry Muffin Recipe
4 cups all-purpose flour
4 tsp baking powder
1/2 tsp salt
1 cup butter, softened
2 cups sugar
1 cup milk
2 tsp vanilla extract
2 cups frozen Highbush Blueberries
1. Combine flour, baking powder and salt in a large bowl.
2. Cream butter and sugar in a large bowl. Add in eggs, milk and vanilla, mix well.
3. Stir in dry ingredients until just moistened, fold in frozen highbush blueberries
4. Fill muffin cups 2/3 full.
5. Bake at 375 degrees for 20-25 minutes
Makes about 2 dozen
