2 Ingredient Mandarin Orange Angel Food Cake

One of my favorite recipes that we have made is the Pineapple Angel Food Cake! It is so easy to make and tastes amazing. I have been wondering how I could adapt this recipe to include other fruits. This week I decided to try making it with Mandarin Oranges. Oh my goodness!!!!

This recipe takes a tiny bit more work than the Pineapple Angel Food Cake but not much. The tiny bit of extra work is so worth it! The cake turns our light and fluffy and tastes amazing. I love that it is so easy to make and looks like you spent hours on it.

Ingredients

  • Angel Food Cake Mix
  • Mandarin Oranges

Equipment Needed

Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.

Spoon/Spatula

9x13 casserole baking dish – This size baking dish fits this cake perfectly

Heat resistant potholders - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

I walked away from the batter for a few minutes and came back to it overflowing over the bowl. Make sure you keep an eye out your batter and do not let it sit for too long.

It starts bubbling and well you may end up with a bit of a mess. I mixed the Angel Food Cake and Mandarin Oranges in a mixing bowl. If you want to save yourself a step you can pour both into the baking dish and mix in the dish.

  • Mix the Mandarin Oranges and Angel Food Cake together
  • Bake at 350 degrees for 30 minutes

    I mix the angel food cake with a can of crushed pineapple...a great Weight Watchers treat. We have only used a 9x13...wondering about the bundt cake idea!

    Hi
    I made your Tropical Angel food cake
    It was a flop in the angel food cake box there were 2 bags one said cake mix one said egg mix , I put the 2 bags together with crushed pineapple and mixed them poured it into a 9x13 pan baked it for 30 min. it turned out spongy 7 sticky , it was awful had to throw it out , Husband would not t eat it . and he eats just about everything
    HELP WHAT DID I DO WRONG!!!!!!!!!!!!

      Hi June, I use the Angel Food Cake mix that only has 1 bag in it. I have heard that the mix with the 2 bags does not turn out well.

    How come you dont use and actual angel food cake tube pan instead of the 9x13

    Hi, I made this cake and put a little lite cool whip on it and it is great. My only problem is the cake seems to fall in the center. I tried the pineapple cake too and it did the same. Do you have any suggestions?

      Hi, What size pan were you using? I used a 9X13 pan when I made the cake and did not have it fall in the middle.

        It is a 9 X 13 metal pan. It looks beautiful till I take it out of the oven. Maybe I'll try cooking it a little longer.

            It did not work. I cooked it an extra 10-12 minutes and it still fell. Tastes fine, but looks pretty bad. Not sure what else to do.

    I made this w/ a 20oz can of pineapple. Very good.
    I suggest mixing in the baking dish as described. It overflowed my bowl as well (lol)
    30 mins @ 350 was spot on. I rotated my dish @ 15 mins due to bad oven, but @ 30 is was perfect.

      I did not prepare the cake pan with shortening and flour. I sprayed it lightly with Pam but that was it.
