As we continue our weekly pumpkin recipes to celebrate Fall and all things Pumpkin, it seems fitting that we would include this Crock Pot Pumpkin Oatmeal Recipe. How better to start the day than with a bit of pumpkin oatmeal. Add in a Crock Pot Pumpkin Spice Latte and you could really have a true pumpkin day.
Are you shaking your head thinking that is just way too much pumpkin to start the day! We understand you could always serve the oatmeal for dinner or really any time of the day. I love that the crock pot does all the work for this recipe and no matter what time of day you want to enjoy it you can. There is nothing quite like waking up to breakfast already prepared for you and all you have to do is dish this pumpkin oatmeal up into a bowl and enjoy! Perfection!
Crock Pot Pumpkin Oatmeal
6 cups water
3 cups uncooked pumpkin
1 1/2 cups uncooked steel cut oats
1/2 cup honey
1 tsp ground cinnamon
1/2 tsp table salt
1/4 tsp ground nutmeg
1. Put all ingredients in crock pot, stir well
2. cook on low for 8 hours, stir before serving
Top with raisins, craisins or any topping you love on your oatmeal.
