    Red Velvet Cake Mix Cookies {Video}

    Yep, you read that right Red Velvet Cake Mix Cookies. I know you are probably thinking I have lost my mind but just wait until you see this recipe.

    You literally use 3 ingredients including Cool Whip to make moist, super yummy cookies!ย These cookies turned out so moist and soft! I can't wait to try this recipe with other types of cake mix.

    I was a bit skeptical when I saw the recipes also. I have made cake batter chocolate chip cookies and Funfetti Cake Mix Cookies but this is the first time I have mixed Cool Whip and cake mix to make cookies.


    Ingredients
    • Red Velvet Cake Mix
    • Cool Whip (I used Lite and the cookies turned out great)
    • Egg

    Equipment

    Hand Mixer/Stand Mixer - You can mix this with either a hand mixer or your stand mixer.

    Large Mixing Bowl - We are big fans of this glass batter bowl that has a handle. It makes it easy to mix ingredients and keeps the mixing bowl steady on the counter.

    Cookie Scoop - A cookie scoop makes it so easy to get consistent cookies that all look great together.

    Baking Sheets - We are huge fans of these baking sheets with sides. You don't have to worry; you will remove the cookies from the oven and have them slide right off.

    Heat resistant potholdersย - A couple of years ago we had a fire scare when we didn't realize we had turned a burner on and a cloth potholder caught fire. Thankfully we walked by the kitchen and saw the smoke and were able to get it out ourselves. Since then we have only used these heat-resistant potholders.

    Recipe Tips

    The dough for these red velvet Cool Whip cookies is super thick. I had to use the KitchenAid Mixerย to get it all combined.

    One thing to note dropping your phone in the dough because you are trying to multi-task really does not work very well. I had to pick red dough out of my phone all evening.

    I used a spoon and spatula to get the dough onto theย Cookie Sheet. This is not a clean easy to use dough, I ended up with red spots all over my hands and fingers working with the dough. It was so worth it when the cookies were done!

    Ingredients

    • 15.25 Ounce Red Velvet Cake Mix
    • 8 Ounce Cool Whip
    • 1 egg

    Instructions

    • Mix all ingredients together. I had to use our KitchenAid Mixer to combine the ingredients. This makes a super thick dough
    • Bake in a 350-degree oven for 12-13 minutes

      Hm, can I use a sugar free cake mix? I donโ€™t mind vanilla cookies! Also, you say to put in oven, but I think you skipped some steps. Do I drop a teaspoon or tablespoon of dough? To a dry pan, greased, or aluminum foil? If I refrigerate in a plastic container, do I need foil or waxed paper between layers? How long will they last? Can I freeze?
